Yash Khajanchee was born in India, where he went to Medical School and completed his training in general surgery in 1996. In 1999, he was offered a research fellowship in Minimally Invasive Surgery at Legacy Institute of Minimally Invasive Surgery in Portland, Oregon.

The fall semester of 2020 has shown so many institutions of higher education the challenges of running courses during the current public health crisis. COVID-19 has forced some difficult decisions about in-person classes and has challenged schools to offer many virtual or hybrid options that might not have existed before. Portland Community College does everything we can in order to keep our students and our staff safe, hoping to maintain a sense of normalcy while also creating a positive and educational experience for all.

Meet Your Instructor: Beth Lennon, Functional Nutrition
Beth has a Master’s of Science in Nutrition from NUNM in Portland and has worked for the past 5 years as a Health Coach and Nutritionist. With broad experience in healthcare communications, clinical nutrition, classroom and patient education, she currently works full time as a Health Coach and Nutrition Specialist for a digital healthcare startup called Hinge Health.

Stacy has been with PCC coordinating dental health education courses over the past three years. She was a dental assistant for 14 years before completing her degree in 2012 at PSU in Community Health Education.

Earlier this year PCC employees Stacy Bone (Institute for Health Professionals) and Ginny Jorgensen (Integrated Community Dental Assisting Instructor) traveled to China with A-dec, a leading dental equipment manufacturer located in Newberg, Oregon. Bone said her goal was to help educate and encourage dentists to utilize the benefits of having a dental assistants working chair-side, a practice that isn’t yet common in China. Bone and Jorgensen connected with Chinese audiences and shared best practices during demonstrations for prospective dental assistants.
