Storrs Smokehouse: Keeping the Fire Burning in Oregon Barbecue

StorrsRetinaLogo (1)Located in Historic Downtown Newberg, Oregon, just down the road from George Fox University, Storrs Smokehouse has been serving up traditional barbecue with a distinct Oregon flair since 2014. In November 2024, long-time team member and executive chef Ashlin Elwood took over as owner, continuing the restaurant’s legacy while infusing it with fresh ideas and passion.

A Passion for Barbecue and Community

For Ashlin Elwood, barbecue isn’t just food—it’s a craft, a tradition, and a connection to both history and community. His culinary journey began at just 17 years old, specializing in proteins and developing a deep appreciation for traditional barbecue. When he joined Storrs Smokehouse in 2019, he quickly fell in love with the culture, the food, and the atmosphere.

Working the smoker and playing with a live fire reminds me of our family camping trips as a kid, being out in the woods and in nature,” he says. More than just cooking, Ashlin values the relationships he’s built. “I cannot give Newberg and this community enough credit; I love all my regulars and families that I get to see on a regular basis, watching kids grow up and hearing all the stories. It warms my heart and makes the long hard days all worth it.”

Oregon may not be widely known for barbecue, but Ashlin saw an opportunity to both honor tradition and define what Oregon-style barbecue could be. “There’s something so American about barbecue, and each region has its own flair or style. I wanted to be the one that continued the long history of barbecue and also create what the Oregon style could be known for.”

Overcoming Business Challenges with the PCC SBDC

Before coming to the Portland Community College Small Business Development Center (PCC SBDC), Ashlin faced real challenges in securing funding and structuring his business. “I had been reaching out to any and all resources available to me to find funding for this project,” he explains. However, it was the one-on-one business advising that made the biggest impact. “Writing a business plan, creating a detailed 2-3 year projection—it was all very new to me, and the PCC SBDC gave me the tools and knowledge to put the whole puzzle together and be confident in my abilities to succeed.”

Through the SBDC’s Capital Access Team and support from business advisor Noah Brockman, Ashlin developed a solid business plan and financial projections, giving him the confidence to move forward and secure funding for the purchase of Storrs Smokehouse.

Business Growth and Future Success

Since working with the PCC SBDC, Ashlin has achieved a major milestone: finalizing the purchase of Storrs Smokehouse with funding through MESO. With a renewed vision, he has introduced new menu items, revitalized operations, and ensured the restaurant’s legacy continues into its second decade.

220120-Ashlin-20“We have been able to bring new menu items and breathe fresh life into a stagnant restaurant,” he says. He has also improved financial oversight. “I've paid close attention to the bookkeeping and financials, along with extending the resources available to me and continuing my business education and knowledge.”

Advice for Other Small Business Owners

Ashlin has one message for entrepreneurs considering working with the PCC SBDC: “Do it! You'll be amazed how in-depth and personalized the program can be. I am still amazed and honored by the work they’re doing, especially at no cost. Without the program, I don't think I would have been able to accomplish everything at the rate I did or have grown so much.”
